One of my friends is off doing this kind of thing. Though I'm not sure how serious her aid work is compared to the holiday thing.
Here's her website anyway:

My first inclination is to point you towards the nearest shelter or Salvation Army in your own city.
I always marvel at young people these days who think the only way to be truly, god-fearingly noble is to do "aid" missions [read: missionary work] overseas.
Please, take a good look around you and help there first. There are plenty of people and organisations that will readily accept your offer of free help.
If you want to go overseas then great; go overseas for fun, sex, work or all three but don't, for the love of Christ, don't go to some hick African country for some internal, ego-driven need.
Just pop into your own city mission and help bag up emergency food parcels.

How do you feel about cholera, dysentry, malaria and/or AIDS?

You're assuming I want to do this to just help people? Rather, its a combination of things. Amused that a few go instantly to try and take a jab when I've almost said nothing regarding my motives.
Oh and also, thank you for the advice, but I do help out with the Salvos and a couple of other organisations.
Please don't think for a minute either that I'm doing this to fuel my own ego. I have plenty of other things back at home to do that, bar the cost =D
And Rae, had them all. If you haven't, man the **** up.

and i can give them to you btw
Just for the record, cheers Texta and Mykle! I had a quick read through both, I'm merely doing this to gather up options, opinions, experiences etc and make a sound decision based on the research done here and there.

tbh if you want to help more effectively, get yourself a degree and training, then you can actually help with some of the things I mentioned. You'll do more as a doctor, for example, then just some backpacker who helps hand out bags of rice.

I have intentions of doing that, and I'd certainly agree with what you've said. In that, I still want to muck around with a few options prior to completing a degree, just bear in mind a majority of this is me pondering options/possibilities =P
Don't be a complete ******, Beinke

Though if helping people is your primary goal become an engineer not a doctor. Healing sick people one person at a time is pretty meaningless. Some decent bridges and a couple of schools would be much more useful.

I was trying to think of more professions but kept drawing a blank, indeed there's more to do than be a doctor.

Teaching English is a good way to go work internationally and still feel helpful, though you need to do courses (check out "teaching english in a foreign language/TEFL"). Bronze is probably also a big source of info on this.

Syt, thanks man (googling and checking out at the moment) , and Texta, I'd agree.
And Larz, that links awesome and I can't believe I didn't think of it myself! Thank you =]
